Soup’s on!

Do you like soup?  I love soup.  Good old-fashioned home-made soup is the best. Mmmm, mmmm, good.

There’s a cold front blowing in moving overcast skies through Florida, so it was a perfect day to get a fire going in the fireplace, light a couple of Mistletoe-scented candles, and between Christmas gift wrapping and writing my weekly column for World Net Daily, get busy in the kitchen.

No two of my soups are the same.  It all depends on what I have in the vegetable drawer or pantry.  But I always start with basics – the vegetable trinity (celery, onions, carrots) and lemon juice to enhance the flavor. Here’s what went into today’s 6 quart pot:

water
carrots
celery
onions
fresh spinach
handful of brown rice, mini wagon wheel pasta and mini shell pasta
diced tomatoes (canned or fresh)
a shake or two of basil and oregano
lemon juice
chicken boullion
1 and a half cooked chicken breasts, cubed

Once everything’s in the pot, the soup simmers for a couple of hours, adding yet another wonderful aroma to the house that says “home”.  A loaf of fresh Italian or French bread, and I’m savoring every spoonful.  The best part? I’ve got enough soup to last for the next few chilly days. Perfect to warm up to after a brisk walk on the beach.  And a lovely break from all the craziness out there…
